Build your own Fajitas
Prep time: 20 min / Cooking time: 10 min
Serves 4.
INGREDIENTS:
For the fajita tomato sauce:
100g tomato passata
1 tsp fajita seasoning
1 tsp dried herbs
1 tsp garlic powder or 2 chopped garlic cloves
Salt & pepper
For fajita filling:
400g can black beans, drained
1 small red onion, cut into thin wedges
1 red pepper – cut into strips
1 yellow pepper – cut into strips
½ tsp garlic powder or 1 chopped garlic cloves
1 lime – juice only
A small bunch of coriander chopped
8 Flour tortillas
Serve with grated cheese, lettuce, tomato salsa, pea-camole and sour cream with chives
METHOD:
1. Prepare all your vegetables: cut onions into thin wedges and cut peppers into strips. If using fresh garlic you will need to peel the clove and then finely chop.
2. For the tomato sauce: put the passata in a bowl, add the dried mixed herbs, garlic powder, fajita seasoning, and seasoning, and mix well.
3. Heat oil in a frying pan and add pepper strips and onion wedges, and cook until soft.
4. Add garlic and cook for a further 1 minute.
5. Add black beans and cook for 2 minutes.
6. Add tomato sauce, lime juice, and chopped coriander and cook for a further 5 minutes until everything is hot.
7. Warm tortillas in a microwave (following manufacturer instructions) or a low oven, then wrap them so they do not dry out.
8. Put warm tortillas, fajitas vegetable mix, shredded lettuce, pea-camole, sour cream with chives, grated cheese and tomato salsa in the middle of the table and have fun building your own fajitas.
TIPS:
✓ If you do not have tomato passata you can make your own tomato sauce by lightly cooking some cherry tomatoes in some oil and crushing them with a potato masher or fork; it will be chunkier but delicious.
✓ You can add more fajita seasoning or chilli or any other herbs (fresh & dried) that you like to the tomato sauce.
✓ This recipe will work fabulously with chicken or beef strips (just cook in the pan before adding the vegetables) or different types of beans.
✓ Swap veggies around to your family favourites, pretty much any veg will work well here.
