Build your own Veggie & Bean Fajitas

A lovely way to eat fajitas. Lay it all out on the counter and let everybody customise their own. A great way to encourage children to try new things!

Prep time: 20 minutes / Cooking time: 30 minutes

Serves 4

INGREDIENTS:

Veggies

  • 1 tbsp vegetable oil

  • ½ red onion, sliced

  • 1 red pepper, cut into strips

  • 1 yellow pepper, cut into strips

  • 2 garlic cloves, finely chopped

  • 1 tsp Cajun seasoning

Beans

  • 1tbsp oil

  • ½ red onion, finely chopped

  • 1 clove of garlic, finely chopped

  • 1 tomato, finely chopped

  • 400g tinned red kidney beans, drained

  • ½ tsp Cajun seasoning

Fresh tomato & sweetcorn salsa

  • 2 tomatoes, chopped

  • 2 spring onions, finely sliced

  • 100g sweetcorn

  • ½ lime, juice

  • fresh coriander, finely chopped (optional)

Additional fillings (optional)

  • Cheese, grated

  • Guacamole

  • Sour cream

  • Lettuce, shredded

METHOD:

1.     For the veggie filling: Slice onion, chop the garlic and cut peppers into strips.

2.     Heat the oil in a large frying pan, add the sliced peppers & onions and cook over medium heat until they begin to soften. Add garlic, spices & seasoning. Cook for 2-3 minutes, until and the flavours come together.

3.     For the bean filling: chop the onion, tomatoes & garlic.

4.     Heat the oil in a large frying pan, add diced onions and cook over medium heat until they begin to soften. Add the garlic and cook for a further 2 minutes. Add the drained beans, chopped tomato, Cajun seasoning & drop of water. Cook for 5 – 6 minutes, until the beans are hot, and the flavours come together. 

5.     Fresh tomato & sweetcorn salsa:  deseed & chop tomatoes, slice spring onions, drain the sweetcorn & juice the lime. In a bowl, mix all the ingredients & season.

6.     To serve: warm the tortillas. Create a ‘fajita bar’ by laying out all the warm fillings, tortillas, tomato & sweetcorn salsa, and any additional toppings like grated cheese in different bowls on the counter or table. Let everybody choose what they like best to build their own fajitas!

TIPS:

✔ Try making your own tortillas, it is easy and fun. Follow our own homemade tortillas recipe and get the children involved.

✔ Placing everything out in bowls so everybody can customise their own fajitas is a great way to encourage fussy eaters to try new foods.

✔ Add some chicken as one of the build your own fajita options, just cut it into strips and cook it in some spices.

✔ Use whatever spices you have available: cumin, chilli, fajita mix, paprika, even peri-peri would be lovely instead of the Cajun seasoning.
