Mild Curried Chicken

This delicious dish is a cook-from-scratch mild curried chicken, using ingredients you’d find in your kitchen. This popular recipe is healthy, full of flavour and a great way of introducing spice to your child.

  • Serving size: 4 portions

Ingredients

  • 340g diced cooked chicken

  • 57g grated carrot

  • 1 small onion finely diced

  • 57g margarine

  • 57g plain flour

  • 1 pint chicken or vegetable stock

  • To taste – curry powder

  • A little gravy mix / powder

1. Mix the finely diced onion and grated carrot and cook in a small amount of margarine and a small amount of water. Cook Gently.

2. Add the remainder of the margarine and allow to melt.

3. Add curry powder to suit your taste (or follow the guide on the label). Add the flour and mix in well.

4. Allow cooking gently for 3-4 minutes

5. Gradually add the stock stirring until it thickens; at this point add a little gravy mix/powder which helps it to thicken and gives colour.

6. Add the cooked diced chicken and heat through thoroughly

7. Taste to check seasoning and adjust to personal taste

8. Serve with rice
