Quorn Enchiladas

Go on a mealtime adventure with the kids next dinner time with our tasty Quorn Fajita Enchiladas! Your little-loved ones will enjoy rolling and wrapping these tasty treats!

Top Tip – These versatile, delicious wraps also work well with chicken and beef. If using meat add the meat to the pan after you have cooked the garlic, cook the meat for 8-10 minutes, then continue as per the recipe below.

Preparation time: 15 minutes
Cooking time: 30 minutes
Serving size: 4 large or 6 smallportions

Ingredients

200g Quorn mince
1 medium onion
1 red pepper
1 x 400g tin chopped tomatoes
1 tablespoon of tomato puree
2 garlic cloves
1 tablespoon of chili powder
1 tablespoon of oil
Handful of fresh coriander
Salt and pepper

Cooking Instructions

  1. Peel and slice the onions.

  2. De-seed and slice the peppers into thin strips

  3. Peel and crush the garlic

  4. Heat a saucepan, add the oil, onions and chilli powder and cook for 3-4 minutes

  5. Add garlic and cook for 1 minute

  6. Add the tomato puree, tin tomatoes and peppers and cook on medium heat for 6-8 minutes

  7. Remove a cup full of the tomato mix and leave to one side.

  8. Add the Quorn to the pan, turn down the heat and cook for 8-10 minutes

  9. Spoon the mixture on to your tortilla wraps and roll, so the mixture is entirely wrapped in the tortilla.

  10. Place the filled tortillas into an oven proof dish

  11. Pour the cup full of sauce you saved earlier over the top, sprinkle with cheese and bake in a hot oven for 10-15 minutes at 190°

  12. Serve with sour cream, guacamole and a mixed leaf of salad.
