Summer Berry Muffins

Makes 12 muffins, ready to use up all those summer berries!

INGREDIENTS

125ml sunflower oil

3 eggs

70ml milk

90g caster sugar

170g plain flour

4 tsp baking powder (20g)

225g berries (blueberries are lovely but any mixed summer berries will do fine)

METHOD

1. Put oil, eggs and milk in a bowl and whisk well until all comes together.

2. Add sugar and mix for another 5 min.

3. Add flour and baking powder and mix again until smooth.

4. Finally, fold in the berries to distribute evenly.

6. Fill in muffin cases and bake at 180°C for 20 to 25 minutes.

TIPS

Perfect recipe to use in the summer when all the lovely English summer berries at a good price in the shops. You can use blueberries, strawberries, blackberries, etc.

In the winter months, you can turn them into apple and berry muffins, using chopped tinned apple and frozen berries. The trick with the frozen berries is to defrost them and drain all the liquid before adding them to the recipe, otherwise you will end up with a very wet mix.
