Tomato & Garlic Butterbeans

Simple one-pan dish, perfect for those days when you fancy cooking something easy with little washing up. The creamy, buttery texture of butterbeans is delicious in this garlicy tomato sauce. Bread for dipping is a must. Try serving it with our easy flat breads!

Prep time: 10 minutes / Cooking time: 35-40 minutes

Serves 4

INGREDIENTS:

  • 3 tbsp of oil

  • 1 white onion, finely diced

  • 1 carrot, finely diced

  • ½ red pepper, finely diced

  • 5 cloves of garlic, finely chopped

  • 1 chilli, optional, deseeded and finely chopped

  • 400g tinned chopped tomatoes

  • 1 tsp paprika, optional

  • 1 tsp of dried basil

  • 800g tinned butter beans, drained

  • 200ml water

  • salt & pepper to taste

    METHOD:

  1. Prepare the vegetables: finely dice the onion, carrots & half a pepper. Finely chop the garlic & chilli (if using).

  2. In a large pan, over a medium heat, cook the finely diced onions & carrots, until they start to soften.

  3. Add the diced pepper and continue cooking for 3-4 minutes, stirring often.

  4. Add the garlic (and chilli, if using), stir and cook for a further 2 minutes.

  5. Add the chopped tomatoes, water, drained butter beans, basil, seasoning and paprika (if using).

  6. Bring to a gentle simmer and cook over a low to medium heat for 20-25 minutes, stirring often, until the sauce has thickened.

  7. Serve hot with some nice bread for dipping.

TIPS:

✔ You can use different beans for this recipe like cannellini, haricot, mixed beans or even chickpeas.

✔ Some chopped spinach towards the end of cooking would make it extra nutritious and colourful.

✔ Add some chopped chorizo at the same time as the peppers for a little extra flavour & protein. Bacon would also be lovely.

✔ Serve with our simple flat bread, otherwise any crusty bread like a baguette, would be great for dipping. Alternatively, it would also be delicious served with rice.
