All-Rounder Sponge

This oil-based sponge is a great versatile all-rounder. Cool and cover with icing or it works really well as a base recipe for any number of variations on a hot sponge pudding.

  • Preparation time: 15 minutes

  • Cooking time: 30 minutes

  • Serving size: 4-6 portions

Ingredients

  • 170g plain flour

  • 15g baking powder

  • 155g caster sugar

  • 75g milk

  • 2 or 3 eggs (large or medium)

  • 1tsp vanilla extract

Overview

1.    Combine the dry ingredients.

2.    Mix all the wet ingredients and beat with an electric whisk.

3.    Add the dry ingredients and mix until smooth.

4.    Pour into a greased 8"x 10" oven proof container and bake for approximately 30 minutes at 180° gas mark 4.

If you are planning to remove the completed sponge from the dish/tin to cool and decorate, line the dish/tin with grease proof paper. baking parchments.

If you are using the recipe as a base for a hot sponge pudding, simply butter an oven proof dish, do not line with paper. Bake and serve at the table straight from the dish, serve with custard cream or ice cream.
