Apple and Berry Muffins

This is the perfect recipe to bake with the kids and one that the whole family will enjoy! Don’t worry if blueberry and apple is not your thing, try using any fruit you do like.

Top tip – You can use tinned apple or any frozen or tinned berries in place of the fresh blueberries.

  • Cooking time: 20-35 minutes

  • Serving size: 12 portions

Ingredients

  • 170g plain flour

  • 3 level teaspoons of baking powder

  • 90g caster sugar

  • 135ml vegetable oil

  • 3 eggs

  • 75ml milk

  • 3 eating apples

  • 75g blueberries

1.       Sieve all the dry ingredients into a bowl.

2.       In a separate bowl mix all the wet ingredients together.

3.       Pour the wet mix into the dry mix and whisked until smooth.

4.       Peel, core and chop the apples into a fine dice (about 5mm).

5.       Wash the berries and gently pat dry with some kitchen roll.

6.       Add the fruit to the muffin mix and fold in.

7.       Line a muffin tray with muffin cases. 8. Divide the mix into the 12 muffin cases.

8.       Bake in a pre-heated oven at 180 degrees for 20-35 minutes.

9.    Press the top of the muffin down gently with your finger and it should spring back up when you remove your finger.
