Dips - Guacamole

INGREDIENTS

  • 3 ripe avocados

  • 1 lime

  • 1 large ripe tomato

  • 1 small red onion, finely diced

  • A handful of coriander leaves, chopped

  • Salt & pepper

INSTRUCTIONS

1. Halve and stone the avocados. Scoop out the flesh with a spoon and put it in a bowl. Add the juice of the lime. Mash it all together using a fork.

2. Chop the tomato and the red onion. Add it to the mashed avocado and mix well.

3. Season to taste and garnish with chopped coriander.

Note that once made, the guacamole will only keep for a while and until it starts to go dark in colour. Best to eat straight away.
