Ginger nut biscuits

MAKES APPROX 45 SMALL BISCUITS

INGREDIENTS

  • 350g white flour

  • 150g granulated sugar

  • 2 level tsps ground ginger

  • 2 level tsps bicarbonate soda

  • 225ml golden syrup

  • 15g butter

METHOD

1. Warm the golden syrup gently.

2. Mix all the dry ingredients.

3. Rub the butter in with dry ingredients.

4. Add the warm golden syrup and mix well.

5. Roll the mixture into 10p size balls and arrange well apart on a lined baking tray. The dough will be sticky, dust your hands with flour if needed.

6. Bake for 15 to 20 minutes at 160°C.

7. Leave on the tray to cool for a couple of minutes, then lift off and let the biscuits cool on a wire rack.
