Leftover turkey toasties

SERVES 2

INGREDIENTS

  • 150g Coleslaw

  • 150g left over turkey, shredded or sliced

  • 4 slices of cheddar cheese, or any other cheese of your choice

  • 4 Gherkins, sliced

  • Butter

  • 2tbsp of mayonnaise

  • 4 slices of large white bloomer

METHOD

1. Spread the mayonnaise on one side of the bread.

2. Divide the coleslaw to 2 slices of bread, then the turkey and the cheese.

3. Add the slices of pickle and top with the other two slices of bread.

4. Spread the outside of the sandwiches with butter.

5. Using a large frying pan, pan-fry the sandwiches on both sides until they are golden crisp and the cheese is starting to melt.

6. Cut the sandwiches in half and serve with extra pickles.
