Bubble and squeak cakes

MAKES 2 PATTIES

INGREDIENTS

  • 6 roast potatoes, chopped

  • A handful of cooked Brussel sprouts, chopped

  • A handful of roast parsnips ,chopped

  • A handful of roast carrots, chopped

  • 150g left over pigs in blankets or ham, chopped

  • 1 large tbsp Branson pickle

  • Salt and pepper

  • Oil or butter for cooking

METHOD

1. Put the potatoes, sprouts, parsnips, carrots and pigs in blankets/ham in a bowl with the pickle and seasoning. Mash with a potato masher until well combined.

2. Form into two patties, or four if you rather smaller ones.

3. Heat oil or melt butt er in a frying pan and fry the patties until golden and hot through.

Bubble and squeak is a great way to use up any left overs. If you used different vegetables or meats than the above you can still make them. The main thing is to have potatoes to bind the rest of the ingredients to form some sort of cake.
