Pancakes with Berry Compote

INGREDIENTS

150g plain flour

3 eggs4

50ml milk

1 ½ tbsps

Vegetable oil plus some extra for cooking

1 tin of strawberries

METHOD

  1. Make the pancake batter: In a large bowl or jug add the flour, egg, milk and 1 ½tbsp. oil. Whisk until you have a smooth batter with no lumps.

  2. Make the strawberry compote: Strain the strawberries, keeping a bit of the juice on the side. Pour the strawberries into a small saucepan, turn the heat of low and gently cook for 4-5 minutes stirring every so often to warm through .If it starts going too dry just add a bit of the reserved juice. If you would like a smoother compote, carefully mash the fruit with a potato masher or a fork. Cover and set aside until pancakes are done, if is not warm enough by then you can always return it to the heat for a couple of minutes.

  3. Cook the pancakes: Heat a little oil in a medium size frying pan. When the frying pan is hot pour some pancake batter in it, and then quickly tilt the pan so that the batter coats the base of the pan in a thin layer. Cook for about a minute until the side touching the frying pan is golden, then flip over and cook the other side. When cooked, slide the pancake into a plate and cover to keep warm (you could use tin foil or a lid). Repeat the process until you have used up all the batter.

  4. Serve pancakes with warm strawberry compote

SUGGESTIONS

  • A dollop of yoghurt on the pancakes would be lovely with the fruity compote.

  • When making the batter you can give them a twist by adding a few drops of vanilla essence or a sprinkle of cinnamon.

  • You can also serve them with slices of fresh bananas and a little melted chocolate as a treat.

  • Go classic with a sprinkle of sugar and a squeeze of lemon.

  • You can also make yummy ham and cheese pancakes. Once you have flipped a pancake in the frying pan and you are cooking the second side, sprinkle some cheese and bits of ham. Cook until the cheese starts to melt, fold in half and serve. If you rather vegetarian options you could do cheese and mushrooms (make sure to slice the mushrooms thin and cook the in a little oil first) or cheese and tomato.
