Veggie Lasagne

Comfort food at its best, this delicious, versatile pasta bake should satisfy hungry tums!

Top Tip – For the white sauce: warm the milk up first, this will speed the cooking process up and reduces the chances of having a lumpy sauce. But if the sauce does get lumpy but doesn’t worry, just pass it through a sieve.

Ingredients

  • 1 large onion

  • 2-3 garlic cloves

  • 300g chopped tomatoes

  • 150g Quorn mince

  • 10 lasagne sheets

  • 1 tablespoon dried oregano or mixed herbs

  • 1 tablespoon of oil

  • Salt and pepper

White sauce

  • 60g butter/margarine

  • 60g plain flour

  • 570ml milk

  • 175g cheese

1. Peel and finely chop the onion

2. Peel and crush the garlic

3. Heat and oil in a frying pan

4. Add the onions, cook until soft, add the garlic and dried herbs

5. Cook for 6-8 minutes on a medium heat

6. Add the tomatoes and bring to the boil

7. Add the Quorn mince and cook for 6-8 minutes

8. Season and remove from the heat

White Sauce:

1. Put the butter in a saucepan on a low heat, when melted add the flour and mix well with a wooden spoon, it should form a thick paste.

2. Cook for 3-4 minutes stirring all the time

3. Remove from the heat and add a couple of tablespoons of milk and beat in

4. Return to the heat and cook for 2 minutes stirring all the time

5. Add some more milk over medium heat and keep stirring

6. The sauce will keep thickening up, keep adding the milk until all the milk is used up

7. The sauce should be a thick pouring consistency Add the cheese, season and remove from the heat and place in an ovenproof dish about 6″ by 8″

Construction of the Lasagne

1. Spoon a small amount of the white sauce into the bottom, and spread, so the bottom of the dish is covered

2. Lay the lasagne sheets on top of the white sauce (2 and a half sheets), so the sauce is covered.

3. Spoon some of the Quorn mix on top of the pasta, then cover with pasta sheets.

4. Spoon some of the white sauce on top then cover with pasta

5. Repeat until all the Quorn mix is used up, the top layer should be the white sauce. 6. Sprinkle with some cheese and bake in a medium oven at 180° for 22-35 minutes.

Tips – For the Quorn mix, you can add peppers and courgettes to the mix before you add the Quorn, for more texture and flavour. This dish also works well with mince beef or minced chicken
