French Toast with Fresh Fruit

A delicious easy dish, made with slices of bread soaked in eggs & milk and then panfried. Perfect for breakfast or brunch, ideally served with a sprinkle of sugar and some fresh fruit. The ultimate recipe to use up old bread.

Prep time: 20 minutes / Cooking time: 20-25 minutes

Serves 4

INGREDIENTS:

  • 4 eggs

  • 150ml milk

  • 30g plain flour (optional)

  • 1 tsp cinnamon

  • 1 pinch of salt

  • 6 slices of bread

  • Oil or butter for cooking

  • Sugar for sprinkling

  • Fresh fruit to serve

METHOD:

1.     Prepare the fresh fruit: wash or peel and slice into bite size pieces.

2.     Cut the bread: each slice into 2 triangles.

3.     Making the egg mixture: in a shallow dish, add flour (optional) & eggs and mix well. Add milk, cinnamon & salt and whisk until smooth.

4.     Soak the bread: place each slice of bread into the egg mixture, allowing it to soak for a minute. Do not oversoak or it will fall apart!

5.     Fry the French toast: Heat oil, butter or a mixture of both in a large frying pan over medium heat. Shake off excess egg mixture from the bread and place slices in the frying pan. Cook for a few minutes until the bottom of the bread starts to get golden brown. Flip and cook in the other side the same. Repeat with the rest of the bread.

6.     Serve warm with a sprinkle of sugar on top and fruit.

TIPS:

✔ Perfect recipe to use up old/ stale bread.

✔  Swap bread for brioche for a richer French toast!

✔  Instead of sugar, drizzle some honey or maple syrup on top.

✔  Lovely served with a side of bacon.
